Very Good Black Eyed Pea Rice

1 cup chopped onion 1 cup chopped green pepper 2 cloves minced garlic 1/4 cup butter or margarine 2 1/4 cup beef broth 1 cup raw rice 10 ounces (pkg) frozen black eye peas 1/8 teaspoon hot pepper sauce salt to taste 1 cup coarsely chopped tomatoes 1/4 cup fresh chopped parsley
Saute onion, pepper, garlic in butter.
Add rice, peas, hot sauce, broth, salt.
Cover and simmer until cooked. Stir occasionally.
Stir in tomatoes and parsley. Recover and cook 10 minutes more.
Stir before serving.
