Old School Baked Pork Chops with Beans

 



4 large loin or shoulder pork chops

salt and pepper

¼ cup minced onion

1 clove garlic minced

1 tablespoon brown sugar

½ teaspoon dry mustard

1 medium can kidney beans, rinsed and drained

1 medium can green lima beans

¼ cup catsup

2 tablespoons vinegar

 

Trim fat from pork chops. Brown chops in fat (or butter) on both sides. 

Sprinkle with S&P. Remove chops. To fat, add onion and garlic.

Saute 5 minutes. Add rest of ingredients. Mix well. Season to taste if necessary.

Pour into 2 quart casserole dish. Top with pork chops. Bake at 350F for 45 minutes.

 

Serves 4.
