Spicy Zucchini-Pineapple Bread

 


3 eggs                                                      

1 cup salad oil

2 cups sugar

2 tsp vanilla

2 cups shredded zucchini

1 cup chopped walnuts

1 cup currants or raisins

1 can (8 ¼ oz) drained crushed pineapple

3 cups flour

2 teaspoons baking soda

1 tsp salt

½ tsp baking powder

1 ½ teaspoon cinnamon

¾ teaspoon nutmeg

 

Beat together eggs, oil, sugar and vanilla

Add shredded zucchini and drained pineapple

Sift together flour, salt, spices, soda, and baking powder.

Add flour mixture to zucchini/pineapple mixture slowly.

Add nuts and currents.

Bake in greased and floured bread pan for 1 hour at 350F.

 

(Freezes nicely too.)
