Favorite Mexican Lasagna

 


1 ˝ pounds lean ground beef

1 teaspoon Lawry’s seasoned sale

1 package (1.25 oz) taco seasoning

1 cup diced tomatoes

16 oz  tomato sauce

4 oz diced green chiles

8 oz ricotta cheese

2 eggs, beaten

9 corn tortillas

2 ˝ cups shredded Monterey Jack cheese

 

In large skillet, brown ground beef until crumbly; drain fat. Add seasoned salt,

taco seasonings, tomatoes, tomato sauce and chiles; blend well. Bring to a boil;

reduce heat and simmer, uncovered, 10 minutes. In small bowl, combin ricotta

cheese and eggs.

 

In bottom of 13x9 baking dish, spread half of meat mixture. Top with half of tortillas.

Spread half of ricotta-egg mixture over tortillas; top with half of Jack cheese.

Repeat once more, ending with shredded cheese. Bake, uncovered, in 350 F oven for

20 to 30 minutes. Let stand 10 minutes before cutting into squares.

 

Makes 8 servings.
